If you live in Las Vegas and happen to be in need {I think we all are} of a top notch Chef, I just happen to have found one. Chef Kas!  This East coast raised Chef has a ton to share about healthy eating and doing it to fit your lifestyle.  Since starting Vegas Bloggers, we’ve had a great time meeting tons of local businesses, schools, attending events and just Las Vegas as a whole {and it’s only been a month}.  This great city offers tons of great resources and having a knowledgeable, fun, reliable and just darn right awesome Chef on hand is a good find to have.

I love his philosophy that he shared at our workshop,

I love that cowboy loves to cook!  I love it so much that I’m sure he thinks I take advantage of his love by allowing him to cook most dinners.  Yep!  That’s right….my sweetest hubby does most of the dinner cooking.  Fact: my family is from the south.  We love butter.  Another fact: I love to cook with butter.  So, with all this factual information he has, he’s made the decision to cook most dinners because he wants to ensure he lives past the age of 50. Really?  Does he think my cooking could do that to him? {probably}

The other night he made a kick butt, killer, super quick meal and I had to share!  I’ll be posting the recipe on my Deal Blog because I want all my recipes in one spot, so be on the lookout.  The recipe came from the Fine Cooking magazine. And if you can believe it….the kids loved it. It did take a bit of coking but after the first bite they loved it.

Meeting Octavia Spencer & being a “blogger”

Being a deal blogger has opened up many opportunities for me and I’m grateful for them all.  When I left my healthcare career almost 7 years ago I had no idea that I would be sitting at a round table interviewing Octavia Spencer{ actress in the upcoming movie the Help} and sitting in a suite in the Mandarian Oriental Hotel the size of my house.  It’s amazing and surreal all at the same time.  I’m always excited to get dressed up with “going out” clothes and meeting other adults {true words from a stay at home some of the time mom.

Having the opportunity to interview Octavia along side other “mommy” {even though we are so much more} bloggers {Michelle, Lauren, Laureen} and top notch film critics {Patty & others} was …shall I say….AWESOME!  Octavia was down to earth, sweet and putting us all in stitches.  I recorded the whole thing but my sweeter than sweet husband was fixing my phone {you know….”fixing it to go faster…} get it!  and…”accidently – erased the entire interview.  Yes, that’s how that story went and that’s that.

The room…oh, the room.   It had it’s own galley Kitchen, bar area, living room, bathroom suite loaded with a dressing area the size of my upstairs.  It was incredible.

But…my favorite by far was the dining room. The lighting was opulent, sexy and chic all rolled up into one. Over looking the fabulous new City center.  It really was a piece out of a move “- so fitting right!”

I have not read The Book yet and everyone that I know that has has given me much grief.  BUT…..I have seen the movie and it is powerful!  You will want to go see it on opening day August 11, 2011.  One of the questions I had to ask her was, “What was it like acting along side the likes of Sissy Spacek & Cicely Tyson?”  Her response was just as mine would be.  Amazing!  Good luck ladies with your new film, much success!

Pure Sweet: Sweet Potato Souffle

One of the things I love about Thanksgiving day is we all know what we have to do.  There’s something sweet and calm in knowing what’s expected of you.  Thanksgiving day:

We enjoy an easy breakfast cooked my my handsome cowboy and it’s always yummy. Then we play around the house for a few hours. I start to make my Very fatening Sweet Potato Soufflee {not sweet potato casserole – slighly different}.  Then once I’m done, cowboy gets in on the action and makes his “you’ll never want to leave the table Mac & Cheesey Casserole.  My Dad does the Smoked Turkey, my mom….the veggies and salad.  AND…my grandma.  She does the “making sure everyone is doing what they should be doing” role.  Our bumpkins set the table.  Then we set up Nani & Papa’s tree…come home and then set up ours.  Systematic and I love it!

You’ve already ready my Thankful post a bit ago so I just wanted to share my sweetest dessert/side dish with you all.  I love making it and love to eat it!  Hope your enjoying your day. Here’s my recipe for this scrumptious dish {the above image is before baking – finished product should be bubbly}:

Sweet Potato Souffle

  • 3 cups cooked and mashed sweet potatoes, from about 2 to 3 small baked potatoes {if your in a pinch, use 2 large cans of sweet potatoes but not my first choice}
  • 1 cup granulated sugar
  • 3 eggs, beaten { I just use a fork}
  • 1/2 cup of whole milk
  • 8 tablespoons unsalted butter, about 1 stick, melted
  • 1 tablespoon vanilla bourbon extract
  • 1/2 teaspoon low sodium salt

Sweet Crumb Topping

  • 1 cup packed light brown sugar
  • 4 tablespoons unsalted butter, about 1/2 stick, cubed, at room temperature
  • 1/2 cup self-rising cake flour {this is what makes it fluffy and rise}
  • 1 cup chopped pecans {sometimes I use more}

Souffle~ Preheat the oven to 400 degrees F. Lightly grease an 8-inch square baking dish with butter preferably.

In a large bowl, combine the sweet potatoes, sugar, eggs, milk, butter, vanilla, and salt. Pour the mixture into the prepared baking dish. I use a flat round baking dish.

Topping~ Combine the brown sugar, butter, flour, and pecans in a separate bowl. Crumble the topping over the sweet potato mixture.

If you need to take this dish to a different location. You can store in the refrigerator until arrival, then begin baking process. Bake for 20 to 25 minutes or until the topping is golden bubbly brown. Serve bubbly hot.  Need to print this recipe?  Click HERE.
